Raspberry Truffle Cake

I saw Raspberry Truffle Cupcakes on a food blog when I was looking around for a Lime Ricky Cupcake recipe.  After seeing the picture of a raspberry filled with chocolate I started thinking of a reason to make them.  I decided to do it as a big cake and layer chocolate cake with chocolate mousse and raspberry frosting.  I topped it with chocolate ganache and the raspberry truffles. 

Thank you, Heather, for having a birthday so I could finally try it out. 

I think the recipe is a keeper.

Lucas Turns 2

It is hard to believe that Lucas is 2. 

We love having him as part of our family.  He is such a happy, fun-loving kid.  

His favorite things are trains, being outside, watching Tangled and drinking chocolate milk. 

For his birthday I decided to practice with some fondant and make a train cake. 

I was really happy with how it turned and I had fun doing it but it took a lot longer than I thought. 

Lucas really seemed to like it. 

Lucas was very excited to see the birthday decorations and he was happy with his new toys. 

 He got a basketball hoop, a Thomas flashlight, Thomas fruit snacks, a Thomas toy and some Star Wars figures to play with when the boys are playing with theirs.
